Here are some of our general recommendations when it comes to pairing food and wine. These are simply guidelines and not rules. We’ve also included a few recipes you might like to try.

In general, we recommend simple wines with complex foods and vice versa. We believe that complex wines pair very well with simple foods and simple wines with complex foods. When both the food and wine are complex it is difficult to enjoy either one fully.

While white wines are typically recommended for poultry or fish we believe that there are many red wines that go just as well these lighter dishes.

Here are some varying recipes that go with many different wines. Ultimately, it’s what you find most pleasing.

The Neighborhood Cellar Pasta with Spicy Tuna and Spinach
This is a dish I would make for friends when I was in my late 20’s. For the lime sauce I used a store-bought West Indies brand – but you can make this very easily yourself. Just be careful handling the habanero peppers. The inner flesh of the peppers and the seeds are what carry the heat!

4 bunches of spinach – rinsed and chopped coarsely
Lime hot sauce to taste (lime juice, salt, fresh habanero peppers - pureed coarsely)
2 cans tuna fish
Lemon juice
Olive oil
1 clove garlic
Dry white wine – about three cups

In a medium saucepan add oil and get hot at about medium high temperature. Add tuna and sear quickly. Lower heat. Add lemon juice and garlic and sauté on a low temperature so as not to brown garlic. Add lime sauce to taste. Sauté. Add spinach and turn up heat to medium high. Add the wine. Deglaze the pan (scrape off anything stuck to the bottom with a wooden spoon). Cover and let the spinach steam. Mix occasionally as the spinach wilts. Remove cover. Once the wine has reduced to about half the sauce is done.

Serve over thick spaghetti, cooked al dente. Serves 5.
